Spiced Lentils Recipe | Easy Healthy Vegetarian Recipes

Benefits of Spiced Lentils

Lentils are definitely good for the heart which is why it is mostly found in many heart healthy meals. It is also low in calories yet rich in nutritional content. Because it is good for the heart, then expect lentils to be high in fiber which lowers a person’s risk of developing heart disease. It is also rich in folate and magnesium which are also good for the heart. Lentils also help in stabilizing blood sugar, high in iron, proteins and B vitamins.

Ingredients for Spiced Lentils

  • 1 cup red or yellow lentils
  • 4 cups waters
  • 1 pinch of ofturmeric
  • 1-inch piece of ginger
  • ½ teaspoon salt
  • 1 teaspoon cumin seeds
  • 2 slide garlic cloves
  • 2 to 3 dried red chilies
  • 3 tablespoons olive oil
  • 1 cup cherry tomatoes (cut in half)
  • Chopped cilantro

Steps for making Spiced Lentils

1.    Bring 1 cup red or yellow lentils, 4 cups water, a pinch ofturmeric and a 1-inch piece chopped ginger to a boil; simmer 15 to 20 minutes.

2.    Whisk vigorously; season with salt.

3.    Cook 1 teaspoon cumin seeds, 2 sliced garlic cloves and 2 to 3 dried red chiles in a skillet with 3 tablespoons olive oil over medium-high heat, 2 minutes.

4.    Add 1 cup halved cherry tomatoes; cook 1 minute.

5.    Stir into the lentils with some chopped cilantro.

  • Cooking Time: 25 minutes
  • Serving: 4
